Almond Pignoli Nut Cookies
Ingredients
- 1 lb almond paste
- 2 cups sugar
- 3 egg whites
- 3 Tbsp flour
- 1 lb pignoli nuts pine nuts
Instructions
- Preheat oven to 350 degrees.
- Like cookie tray with parchment paper.
- Break up almond paste and mix with the sugar until mixture is very fine.
- Beat egg white until stiff and fold into paste.
- Add flour and mix well.
- Form 1 1/2 inch balls.
- Place nuts in a bowl and roll each ball in the nuts until moderately covered.
- Slightly flatten each ball.
- Place onto the parchment lined tray.
- Bake for 20 minutes until lightly brown.
- Let cool before enjoying!
