Easter Pizza

Easter Pizza is one of the most cherished family traditions.  Every year, the family would gather over Nonni’s house to help make the pizzas.  At noon the feast would begin.  Following the eating and stealing of leftovers for those who couldn’t make it, the children would partake in an Easter Egg hunt.
Servings 8 pizzas

Ingredients
  

  • 10 loaves homemade dough or store bought (also see homemade dough recipe)
  • 9 lbs whole milk Ricotta cheese
  • 6 lbs lean ground beef top round preferred
  • 1 lb prosciutto sliced and chopped
  • 1 1/2 cups grated Parmesan or Romano cheese
  • 1/4 cup dried mint
  • 2 1/2 cups mozzarella shredded
  • salt to taste
  • pepper to taste

Instructions
 

The Night Before

  • Wrap the Ricotta in a cloth and place in a colander to drain the liquid.
  • Let Ricotta sit in the fridge wrapped overnight.
  • If dough is cold, store at room temperate ~4 hours to allow the dough to rise before you begin the rest of the recipe.

The Morning Of

  • Cook and drain the ground beef.
  • Mix the ricotta, beef, prosciutto, eggs, Parmesan, mint, mozzarella and salt and pepper to taste by hand until completely blended.
  • Roll out a loaf of dough into a rectangle on a floured surface until the dough is 3/4 of an inch thick.
  • Spread out the mixture on one half of the dough. Make sure the mixture is 1/2 inch thick.
  • Fold over the dough to cover the filling. Seal on all ends.
  • Place the dough on a large greased baking sheet.
  • Cover with a towel while repeating steps 3 – 6 until all ingredients are used.
  • Allow the dough to properly rise before baking.
  • Bake at 350 degrees for between 20 and 30 minutes, until golden brown.
  • Let fully cool before enjoying!
